The term "Folic acid" includes all forms of folates. In English, "folate" sounds similar to "leaves", and this is not a coincidence. The words share a common root (the Latin word folium, meaning "leaf"), which is a reminder that green plant foods can be one of the richest sources of folate.

Folates are susceptible to oxidation, rapidly lose their activity in food and are largely (up to 90%) destroyed by cooking.

Synthetic folic acid

Folic acid obtained from food must be metabolized to 5-methyltetrahydrofolate (5-MTHF) to achieve full metabolic effectiveness.

Most of our folate intake comes from synthetic versions of folic acid in supplements and added to foods. Today we know that folic acid undergoes complex metabolism and that there are differences among populations in the ability to effectively metabolize folic acid into its bioactive form (1,2).

Folate in food is hydrolyzed to monoglutamate in the intestine before being absorbed by active transport through the intestinal mucosa. Therefore, before entering the bloodstream, the monoglutamate form is reduced to tetrahydrofolate (THF) and converted to methyl forms.

Folic acid, on the other hand, is first reduced to dihydrofolate by the enzyme dehydrofolate reductase (DHFR) and then to tetrahydrofolate. In humans, the intestine appears to have a very high capacity to convert reduced folate from food into 5-MTHF, but a limited capacity to reduce folate. In fact, it reaches the liver in an unmetabolized form.
